Here’s a look at some of the foods that will be available when the Texas State Fair kicks off later this month (it starts Sept. 27 and runs through Oct. 20).
1. Candied Pork Belly Bacon Bites
Perfect for pork lovers, Candied Pork Belly Bacon Bites are essentially bacon wrapped in bacon that is then candied.
According to the Texas State Fair, this dish is served on a stick, and is available at the Cavalcade.
2. Hot Cheetos Korean Corn Dogs
According to the Texas State Fair, unlike the traditional corn dog, this Korean-style corn dog is half hot dog and half mozzarella cheese.

Its website says this hot dog and cheese combination is “coated in wheat and rice flour, coated in panko breadcrumbs, and deep-fried for extra crispiness.”
After being fried, the corn dogs are coated in spicy mayo and topped with warm Cheetos pieces.
3. Texas BBQ Rib Deviled Eggs
Another turn in Texas Classic MealsTexas BBQ Rib Deviled Eggs combine barbecue and deviled eggs together.
According to the Texas State Fair website, “With the creamy, delicious traditional deviled egg filling you know and love, this dish is topped with crunchy coleslaw and tender barbecue rib meat slathered in a beer barbecue sauce.”
4. Fernie’s Goat Funnel Cake
A true celebration of Texas culinary staples, the Fernie’s GOAT (Greatest of All Texas) Funnel Cake, according to the State Fair of Texas, combines Fernie’s Funnel Cake with Blue Bell ice cream, cherry Dr. Pepper syrup and El Fenix pralines.
Its website says the dish is “sure to satisfy DFW area natives and visitors looking for a taste of Texas.”
5. Dickel’s ‘Triple Meat Big Back Snack’
Everything really is bigger in Texas, as evidenced by this “Triple Meat Big Back Snack,” sold by Dickel Smokehouse.
The fair’s website says the five-layer “snack” features “Abuela’s favorite Elote Street Corn recipe” topped with sliced beef brisket, smoked gouda macaroni and cheese, buttermilk biscuits, Hogzilla pork belly burnt ends and “loaded nacho beef brisket sausage links” topped with deep-fried crinkle-cut maple waffle-flavored potato slices.
6. ‘The Nephew’
The Texas State Fair said “The Nephew,” inspired by the nephew of the owner of Smith’s Spot BBQ, “has the perfect blend of sweet and savory.”

“Imagine this: a warm glazed donut topped with soft brisket, gooey mozzarella cheese, a drizzle of honey, and a sprinkle of powdered sugar,” the website states.
7. Fried Matcha
A deep-fried twist on Japanese Flavor According to the Texas State Fair, fried matcha, commonly used in beverages, “celebrates matcha in two delicious ways.”
“The first is Fried Mochi Matcha Ice Cream, a deep-fried delicacy with a crispy, chewy mochi shell,” it says.

“The second dish is the Fried Matcha Sando, which features deep-fried Japanese milk bread topped with rich Matcha Chantilly cream, and garnished with fresh strawberries and Matcha biscuit sticks for an extra layer of flavour and texture.”
8. Caramel Machiato Fritters
As another deep-fried variation on the beverage, Caramel Macchiato Fritters turn breakfast into a sweet cake ball dessert.
“A classic, rich dose of delicious caramel is the foundation of these creamy coffee cake balls,” the fair’s website states.

“Each cake ball is dipped in beetnut batter and fried until golden brown.”
The fritters are then topped with whipped cream, caramel and white chocolate. They are served with a syringe of espresso.
Pulfer told Fox News Digital that although state fair foods are known for being fun and wonderful, they also serve a deeper purpose.

He added that the fair is “a 501c3 non-profit organization — so a portion of all food purchases go to good causes in our community year-round.” “All of our concessionaires are small businesses.”

He added, “Some people also operate physical restaurants, catering businesses, and food trucks; some travel around the country and work at other fairs, festivals, and events throughout the year; and some focus solely on working at the State Fair of Texas each fall.”
